PIG OUT AT SHEFFIELD GASTRO PUB

Award winning Sheffield Gastro pub The Milestone, has announced the return of their popular ‘Nose to Tail’ weeks and will kick off the 2010 series of events on Monday 22 February with ‘Pig Week’.

 The Kelham Island Gastro pub has designed a pig inspired menu with dishes including boned and rolled pigs head, braised pork shoulder with nettle risotto and deep fried pigs tail, using their very own rare breed pigs sourced from local supplier Hallfield Head Farm in Grenoside, Sheffield.

 Owner of the Milestone Matt Bigland said;  "We were overwhelmed with the popularity of our Nose to Tail events last year and have brought them back by popular demand. It’s great to see our guests enjoying  food produced in Sheffield and eating meat that has been sourced from a farm less than 4 miles away.”

 The Gloucester Old Spot pigs live in natural free range surroundings and are reared on nuts, vegetables and fruit, which guarantees the superior quality of the meat.

 The Milestone Head Chef Simon Ayes said,  “Pig Week is a fantastic opportunity for us to show off some of our most innovative ideas and encourage our guests to experience creative dishes using forgotten cuts of meat and everything the pig has to offer.”

The Milestone, who have been awarded a prestigious Michelin-recommendation in the latest Michelin guide to eating out in pubs 2010 and last year scooped ‘Restaurant of the Year 2009’ at the eatSheffield Awards, will use Pig Week as a creative way to inspire and introduce guests to new and innovative dishes and less frequently used cuts of meat.

Pig Week is a chance to celebrate and enjoy a selection of local rare breed Pork produced by the Milestone in conjunction with Hill Head Farm, Grenoside.

 Gastro Menu

 Starters

Deep fried pigs tail with malt vinegar, chilli and onion dip

Ham hock and pea risotto finished with tarragon pesto

Farmhouse pork terrine with bread and onion jam

Carpaccio of stuffed pigs trotter with pickle mayonnaise and mustard dressed salad

Crisp pork belly with fried squid, pear and vanilla puree

 

Mains

Pork plate for 2 to share – Roast rack of pork, black pudding, mashed potato, crackling, roasted

root vegetables, sage crisps and jus (allow 30minutes cooking time)

Braised shoulder of pork, nettle risotto and spring onions

Milestone pork pie, new potato salad, coleslaw, pickled onions, dressed leaf and bread

Boned and rolled pigs head, mashed potato, confit shallot and cornichon gravy

Confit pork belly with winter vegetables, sage dumplings and apple sauce

  • Cucumber, Hendricks gin and ginger shooter
  • Carpaccio of boned and rolled pigs head, langoustine, crisp pig’s ear, pear and vanilla puree
  • Ham consommé, black trompette mushrooms, hock ravioli, nettle pesto
  • Surf clams with Crisp pork belly, butternut squash puree and tarragon froth
  • Pork fillet dusted with cep powder, Pork faggot, roasted turnip and puree, hazelnut jus
